Zoete Aardappel – Andijvie Stamppot

Nu het herfstseizoen volop aan de gang is, hebben de recepten, die online komen, deze maanden ook een herfstachtig tintje. En zeg het nu eens zelf: wat zou jij, op zo’n sombere dag als vandaag, het liefst willen eten? Stamppot natuurlijk! Daarom speciaal voor jullie deze keer een heerlijke Zoete Aardappel – Andijvie Stamppot!

Dit heb je nodig voor de Zoete Aardappel – Andijvie Stamppot.

(Voor vier personen) * kook je voor minder personen? Halveer het recept dan.

  • 6 tot 8 Zoete Aardappels
  • 400 gram gewassen en gesneden Andijvie
  • 2 eetlepels Dijon Mosterd
  • 1 eetlepel gedroogde Peterselie
  • Peper en Zout

Tip: Houd een kopje kookvocht van de Andijvie achter. Vind je de Stamppot te droog? Voeg dan een scheutje kookvocht toe.

Vleestip: Houd je van vlees? Het is erg lekker om gebakken spekjes of stukjes gerookte kip toe te voegen aan de Stamppot.

En zo maak je de Zoete Aardappel – Andijvie Stamppot!

  1. Snijd de uiteinden van de Zoete Aardappel af en schil ze. Als je klaar bent met schillen, snijdt je ze in stukken, doe je ze in een pan en voeg je ruim water toe. Zet de pan met Zoete Aardappels op het vuur en voeg zout naar smaak toe. Kook ze gaar.
  2. Doe de Andijvie intussen ook in een pan, voeg een beetje water toe en zet de pan op het vuur. Laat de Andijvie slinken, daarna kan hij van het vuur af.
  3. Als de Zoete Aardappel en de Andijvie gaar zijn, giet je beide pannen af. (vang een beetje kookvocht  van de Andijvie op) Laat de Andijvie even uitlekken.
  4. Voeg de Zoete Aardappelen en Andijvie samen in een pan en stamp het door elkaar met de stamper.
  5. Voeg de Dijon Mosterd en de peterselie toe en roer het door de Stamppot heen.
  6.  Voor net wat extra pit voeg je een snuf peper toe. Roer de Stamppot nog een keer goed door elkaar ennn… Genieten maar!

Dit is de perfecte maaltijd voor een doordeweekse dag, als je het mij vraagt. Mijn man en dochtertjes zijn dol op Stamppotten en dus eten wij dat heel graag! Lekker makkelijk en heel smaakvol. Super gezond en met Pure ingrediënten. Wat wil je nog meer?
